Honey Glazed Chili + Lime Chicken

                      Ingredients
- 4 lbs boneless skinless chicken breasts, filleted
- 2 Tbsp chili lime seasoning
- 1 Tbsp adobo
- 
Salt, to taste 
- 2 Tbsp olive oil (or neutral flavored oil)
- 
6 Tbsp. butter 
- 
1 Tbsp. garlic, minced 
- 
½ cup honey 
Directions
- Optional: Score the tops of the chicken breasts in a cross cross pattern, taking care not to cut through the chicken breast. 
- Place chicken in a large Ziploc bag. 
- Prepare the marinade by combining the Big L’s Blends Chili + Lime Seasoning, Big L’s Blends Adobo, Salt, and Olive Oil. 
- Pour marinade into bag and allow chicken to marinate for at least 30 minutes, however overnight would be best. 
- Heat a large pan over medium to medium-high heat. Place 1-2 Tbsp olive oil into pan. 
- Once pan is hot, place chicken into pan and cook for 3 minutes per side (depending on thickness of chicken, you may need to add additional time). Internal temperature should reach 165 degrees. Repeat until all chicken has been cooked. 
- Reduce heat to medium- medium low. 
- Remove any burned bits from the pan, but do not discard any liquid. 
- Using the same pan you cooked the chicken in, add butter to begin making the glaze. 
- Once butter melts and honey and garlic and mix well. 
- Once glaze ingredients have fully combined, pour over chicken and serve immediately. 
Recipe Note
To make it extra saucy, double the glaze recipe.
Mango Salsa Recipe:
12 oz Frozen mango, diced
2 Tbsp red bell pepper, diced
2 Tbsp green bell pepper or 1 Tbsp jalapeños diced.
1/8 cup chopped cilantro
1/4 cup red onion, chopped finely
Juice of 1/2 lime
1/4 tsp salt
